When one thinks about Sicilian cuisine, the very first image that comes up to mind is fish; nevertheless, know that the culinary tradition of the island does boast some tasty surprises even with meat based dishes. The perfect match to these beef rolls alla messinese, whose we provide the recipe below, is a good quality red wine just like a Nero d’Avola: a Drus by Cantine Gulino.
Ingredients for 4 people:
- 8 lean thin beef cuts
- 250gr bread crumbs
- 50gr fresh chopped tomato
- 25gr grated pecorino cheese
- 50gr provola cheese
- 50gr mortadella (bologna ham)
- 1 clove of garlic
- parsley
- salt
- black pepper
- extra virgin olive oil
Method:
Lay the meat cuts down onto a baking paper sheet and remove with a knife the eventual fat in excess. Slightly tenderise the meat and then cut the slices into two to use afterwards for the rolls. In a bowl pour and mix bread crumbs, chopped tomato, pecorino cheese and a pinch of salt and pepper. Finely chop a clove of garlic and some parsley; roughly chop the provola cheese and the mortadella; then add garlic, parsley, provola cheese and mortadella into the bowl and mix while pouring at discretion some extra virgin olive oil. Stuff with the mix the meat cuts and then roll them in order to have 4 skewers with 4 rolls each. Lay the baking paper sheet with the stuffed meat rolls onto a baking tray, brush with some olive oil and put in the oven fora round 10 minutes at 200 C°. Serve warm and with roast potatoes or mixed salad.
